From the Farm
Our bull, Eeyore, is spending this winter at Windsor Dairy. Meg and Arden are happy having him and use him for breeding their cows.

With Eeyore gone we then could bring the stockers and the horse to the cows which makes life easier for us, the main challenge being getting water to them.

Eeyore and Emerald, one of our cows now, we bought as calves in 2004 from the Jim Miller Herd at above 7000 feet in New Mexico. We got them through Steve Warshauer at Beneficial Farm, a biodynamic farm near Santa Fe. Jim's herd of pasture fed Ayrshires goes back 95 years. What a FIND!

Jim, now, because of age had to sell his animals. Steve indirectly got some of Jim's animals and moved them to Art and Susanne Quintana's where Lawrence picked up four cows last Saturday. They are now happy and being milked at the Windsor Dairy where they will stay until spring.

Ursula's tips
You will start getting lactic fermented veggies in the next weeks. The lactic acid that is formed during the process is a natural preservative that inhibits putrefying bacteria, enhances the digestibility, increases the vitamin levels, produce numerous enzymes as well as antibiotic and anti-carcarcinogenic substances and promotes the growth of healthy flora throughout the intestines. That's a good long list of benefits from these vegetables. You can use them as a condiment, in salads, in soups, with a sandwich...

In the Share
Potatoes, onions, turnips, napa cabbage, carrots. Yum.
